Hungry for more business, the co-owners of Jefferson’s Lounge and Lincoln’s Cub in Council Bluffs are cooking up a new concept.”It’s kind of a centralized one kitchen with three restaurants associated with each centralized kitchen that are kind of offshoots of each one,” said co-owner, Jon Nelson.Nelson and his business partner, Ryan Mann formed the Dead President’s Group for the new way to run multiple restaurants at the same time. The concept is using one kitchen to run three different restaurants.”We really wanted to create each one bit to have its own focus and its own identity. So, each one will feel like its own space. That was so you won’t even really realize that we have a centralized kitchen,” Ryan Mann said.They’ve partnered with City Ventures in La Vista to serve up the trio of offerings. Construction is underway at the City Center development. COVID-19 left a bad aftertaste in the restaurant business but both Mann and Nelson said they’re up for the new challenge. ‘The market has shrunk considerably. It’s tough to find help at the moment. And that’s kind of why we’ve shifted gears a little bit, and focused on this more centralized kitchen model,” Nelson said.Look for Franco’s Fresh Mexican, The Daq Shack serves an island vibe and another Lincoln’s Pub with pizza and pasta on the menu.They’re building the same restaurants in Lincoln’s new Leighton District to meet the different tastes of restaurant-goers. The partners said this creative concept has all the right ingredients to deliver a recipe of success.”Food costs are continuing to rise, we don’t see those coming down anytime soon. So we’ve really had to kind of change our model a little bit, we feel like it’s unique and we feel like it will give us the best opportunity to succeed,” Nelson said.The Lincoln restaurants should open this fall.The La Vista ones are scheduled for early spring 2022.They will need to fill about 100 jobs.
